Bamboo shoots are the tender young sprouts that emerge from the soil as bamboo grows. They are prized for their delicious flavor, and the edible parts are the newly grown, plump, and sturdy shoots. Bamboo shoots originated in China.

As the name suggests, the shoots that break through the soil in spring are called “spring bamboo shoots.” Spring shoots are the most tender and flavorful, naturally crisp and refreshing — as the saying goes, “Nothing compares to the freshness of spring bamboo shoots.”

The shoots harvested during summer and autumn are called “summer bamboo shoots.”

Winter bamboo shoots are moso bamboo shoots hidden underground during winter. They are pointed at both ends like small boats, with creamy white flesh, thin shells, and a tender texture. Although winter bamboo shoots are more mature, they do not lose their tenderness, and their price is often slightly higher than that of spring shoots.

There are more than 80 varieties of edible bamboo shoots, including moso bamboo shoots, light bamboo shoots, hemp bamboo shoots, and ci bamboo shoots. After processing, bamboo shoots can also be transformed into dried bamboo shoots, bamboo shoot skins, shredded bamboo shoots, pickled bamboo shoots, sour bamboo shoots, preserved bamboo shoots, and more.

Although all bamboo plants produce shoots, not all bamboo shoots are suitable for cooking. Bamboo shoots intended as vegetables must have tender flesh, no bitterness or unpleasant taste, or if slightly bitter, they must become edible after processing to remove the bitterness.

Bamboo shoots cannot be eaten raw. When cooked alone, they may taste bitter and astringent, but when stir-fried with meat, their flavor becomes especially delicious. Bamboo shoots can be used in soups or cooked in various dishes, creating many delicacies such as bamboo shoot crucian carp soup, braised pork with bamboo shoots, and bamboo shoot rice porridge. Today, bamboo shoots are also processed into dried products, magnolia slices, and canned foods in large quantities.
